Makes 8 popsicles

  • ¼ cup dried sorrel
  • ¾ cup water
  • 10 mint leaves
  • 2 tablespoons honey or agave nectar
  • 5 cups cubed watermelon
  • 1 lime, zested and squeezed

Prepare the sorrel by bringing a small saucepan of water to boil and simmering the flower of the plant for 8 to 10 minutes. Remove from heat. Add mint leaves and honey. Stir until dissolved, then let mixture stand for 20 to 30 minutes to steep.

Meanwhile, blend the watermelon in a food processor until smooth. Strain watermelon through a sieve lined with cheesecloth. Strain in the sorrel liquid. Add the juice and zest of the lime and stir.

Pour into popsicle molds and freeze until solid.
